As a big meat eater, I was excited to try the Elk Wellington Bites. Elk tenderloin and bacon? Yes, please! The beautiful presentation had me pulling out my camera for a few photos before I could even think about diving in. The golden pastry, tender elk and balsamic glaze made this one of those dishes that looks every bit as good as it tastes.
I’ll admit, I’m not a big mushroom fan, so I wasn’t sure how I’d feel about the mushroom duxelles—but it absolutely worked. The mushrooms and bacon blended together into a savory, earthy mixture that complemented the tender elk without overpowering it. Wrapped in warm, flaky puff pastry with a touch of sweetness from the balsamic glaze, every bite had a little bit of everything.
