S'mores Cupcakes

INGREDIENTS:

CRUST:

  • 1 1/4 cup  graham cracker crumbs

  • 5 tbsp butter, melted

  • 5 tbsp sugar

CHOCOLATE CUPCAKES:

  • 1 cup  flour

  • 1 cup  sugar

  • 6 tbsp Dark Cocoa powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 egg

  • 1/2 cup  buttermilk

  • 1/2 cup vegetable oil

  • 3/4 tsp vanilla

  • 1/2 cup boiling water

MERINGUE MARSHMALLOW FROSTING:

  • 4 eggs whites

  • 1 cup  sugar

  • 1/2 tsp cream of tarter

  • 1 tsp vanilla extract

  • Chocolate sauce 

  • Graham cracker crumbs

INSTRUCTIONS:

  1. Heat oven to 325 degrees and prepare a cupcake pan with liners.

  2. In a small bowl, combine crust ingredients and mix well.

  3. Press about 1 1/2 tbsp of the mixture into the bottom of each cupcake liner.

  4. Bake crusts for 7 minutes then remove and set aside.

  5. To make the cupcakes, add all dry ingredients to a large bowl and whisk together.

  6. Add egg, buttermilk and vegetable oil to the dry ingredients and mix well.

  7. Add vanilla to boiling water and add to mixture. Mix well.

  8. Pour batter into cupcake pan, filling a little more than half way, and bake at 300 degrees for about 17-19 minutes.

  9. When done, remove cupcakes from oven and allow to cool for about 5 minutes. Then remove from cupcake tin and allow to cool.

  10. While cupcakes cool, make the meringue frosting. Combine egg whites, sugar, and cream of tartar in a metal, heatproof mixer bowl.

  11. Place over a saucepan with simmering water (or use a double boiler).

  12. Whisk constantly until sugar is dissolved and whites are warm, to between 120 and 140 degrees on a thermometer, about 4-6 minutes. Remove from heat.

  13. Using the whisk attachment, beat on low speed, gradually increasing to high, until stiff, glossy peaks form, 5 to 7 minutes.

  14. Pipe frosting onto cupcakes  and top with chocolate sauce and graham cracker crumbs, if desired.

 

 

S’MORES BARS

INGREDIENTS

• 1 cup flour

• 1 cup graham cracker crumbs

• ½ tsp baking powder

• ½ cup butter, softened

• 2/3 cup dark brown sugar

• 1 egg

• 1 ½ cup mini marshmallows 

• 1 cup chocolate chips

• Parchment Paper

• Square Baking Pan

INSTRUCTIONS

  1. Heat oven to 350 degrees. In a small bowl, mix together flour, graham cracker crumbs, and baking powder. Set aside.

  2. In a large bowl, beat butter, egg, and brown sugar until evenly mixed. Gradually beat in dry mixture until smooth.

  3. Line a square pan with parchment paper, and then pour all but ½ cup of your batter into the pan, pressing to the bottom to make a “sheet” of batter.

  4. Top with a layer of chocolate chips, then marshmallows.

  5. With your hands, toss in small chunks of remaining batter randomly around your pan, and then press in.

  6. Bake at 350 degrees for 25-30 minutes, or until marshmallow is golden brown.

  7. Cool slightly before cutting into squares

 

 

Crock-Pot S’mores Cake

 

Ingredients

  • 1 box chocolate cake mix

  • ingredients on the box (eggs, oil and water)

  • 2 cups mini marshmallows

  • 2 cups milk chocolate chips

  • sleeve graham crackers 

Instructions

  1. Mix cake mix according to directions.

  2. Spray the bottom of a crock pot.

  3. Add 1/2 of the cake mix.

  4. Sprinkle 1/2 of the marshmallows and chocolate chips over the top. Layer the graham crackers over the top. (saving at least 1 cracker) breaking into pieces if necessary.

  5. Pour the remaining cake batter over the top.

  6. Cook on low for approximately 1 1/2 to 2 hours.

  7. Add remaining chocolate chips and marshmallows and crumble the graham cracker over the top.

  8. Cook for another 30 minutes.

  9. NOTE - if the cake appears to be burning along the edges, you can push graham crackers along the sides.

  10. Serve warm with vanilla ice cream.

 

 

S'mores Grilled Cheese

INGREDIENTS

4 tbsp. butter

8 slices white bread

4 cup mini marshmallows

1 cup chocolate chips

4 graham crackers, crushed 

1/4 cup cinnamon sugar

DIRECTIONS

  1. To make one sandwich, top a slice of bread with 1 cup marshmallows, 1/4 cup chocolate chips, and ¼ of crushed graham crackers. Repeat to make 4 sandwiches. 

  2. In a large skillet over medium heat, melt butter. Working in batches, cook sandwiches until golden and toasted on both sides, about 2 minutes per side. 

  3. Immediately sprinkle cinnamon sugar over sandwiches and serve warm.

 

 

S'mores Nachos

INGREDIENTS

  • 12 graham crackers approx. 2 1/3 packs, roughly broken up

  • 2/3 bag mini marshmallows

  • 1 1/2 cups semi-sweet chocolate chips

INSTRUCTIONS

  1. Preheat oven to 350F.

  2. Fill an 8" cast iron skillet* with layers of graham crackers, chocolate chips, and marshmallows. Bake for 10-15mins or until marshmallows are golden (broil if desired).

  3. Drizzle with melted chocolate if desired. Allow to cool slightly before serving.

 

 

S’mores Hot Chocolate

INGREDIENTS

  • 2 Cups Whole Milk 

  • 1/2 Cup Dark Chocolate Melting Wafers

  • 1 tsp Toasted Marshmallow Syrup

  • 1/2 tsp White Sugar

  • 1/4 tsp Vanilla Extract

  • 1/4 tsp Coffee Grounds

  • 1/8 tsp Ground Cinnamon

  • Mini Marshmallows

  • 2–3 Graham Crackers

  • Chocolate Syrup

INSTRUCTIONS

  1. First, bring the 2 cups whole milk to a simmer in a pot, then add the chocolate stirring constantly until the chocolate has melted.

  2. Then add 1 Teaspoon Torani Toasted Marshmallow Syrup, 1/2 teaspoon white sugar, 1/4 teaspoon vanilla extract, 1/4 teaspoon coffee grounds, 1/4 teaspoon ground cinnamon.

  3. While your hot chocolate is cooling, microwave a small plate of marshmallows for 10-15 seconds. Dip the top of your mugs in the marshmallows & then into a plate of crushed graham crackers.

  4. Once the top of your mugs are coated in marshmallows & graham crackers, carefully pour your hot chocolate into your mugs.

  5. Finally, make a small pile of mini marshmallows on a baking sheet lined with parchment paper & broil them for 10-20 seconds, or until golden. *3-4

 

 

Eggo S'mores

INGREDIENTS

24 mini waffles

24 squares Hershey's chocolate 

12 marshmallows

3 tbsp. butter, melted

3 tbsp. cinnamon sugar 

DIRECTIONS

  1. Preheat oven to 400° and line a medium baking sheet with parchment paper. Place waffles on baking sheet in a single layer and bake 5 minutes.

  2. Place two pieces of chocolate and one marshmallow on 12 of the waffles, then top with remaining waffles to make sandwiches. Brush tops of waffles with butter and sprinkle with cinnamon sugar. 

  3. Bake 2 to 3 minutes more, or until chocolate and marshmallows are melty.

 

 

S'mores wrap

Ingredients 

  • 1 C creamy peanut butter

 • 8 - 8in flour tortillas

 • 2 C miniature marshmallows 

Directions 

  1.  Spread about 2 T peanut butter on each tortilla 

  2. Top with about 1/4 C of marshmallow and 2 T chocolate chips

  3. Roll up and wrap in aluminum foil and seal tightly Bake at 375 for about 5-10 minutes or until chips and marshmallos are melted. 

  4. You also can microwave but need to wrap in plastic wrap.

 

S'mores Skillet Cookie

Ingredients

  • 1 package Triple Chocolate Chunk Cookie Mix

  • ½ cup unsalted butter, softened

  • 1 large egg

  • 1/3 cup mini marshmallows

  • 2-3 graham crackers, crumbled

Toppings:

  • Mini Marshmallows

  • Graham crackers

  • Chocolate bar, broken into squares

Directions

1. Preheat oven to 375 °F. 

2. In a medium bowl, stir together cookie mix, butter and egg until dough forms. Stir in mini marshmallows and crumbled graham crackers. 

3. Press cookie dough into a greased 9 or 10-inch round cast iron skillet. Create a slight mound in the middle (the cookie tends to puff around the edges). 

4. Bake the cookie for 21-23 minutes, Top the cookie with the toppings (mini marshmallows, graham crackers and chocolate chips). Bake 2 more minutes until marshmallows are browned. Let cool slightly before enjoying.
