The holidays are upon us - and dang it, it's time to splurge! Star Spangled Batter is ready to
enable help you if you've volunteered for class parties or want to impress your clients with a sweet surprise. Need a sugar rush? No judgment here.
Star Spangled's bakery case is always full of cupcakes. The assortment and flavors change with the season, but the chocolate and vanilla will forever be adorned with a seasonal sprinkle or two.
Currently, Halloween and fall themed cupcakes are popular requests. I grabbed the chocolate ones because they have bones and cute gravestone candies on top. I always appreciate the 'cute' over the 'scary' - and I know I am in the minority this time of year, but cute always belongs on a cupcake, yes?!
If you've been asked to bring something sweet for a classroom full of kids - may I suggest the mini version? These two-bite cupcakes are the perfect portion size when you just want to add just a LITTLE BIT to the sugar-induced mood swings, but not be responsible for the entire thing. We all have our reputations to think about, do we not? These little guys will steal the show, taste amazing (my kids recommend the vanilla cake with chocolate frosting - can you see how they are missing from the pictures? Little hands kept snatching them up!), and only cost $11 a dozen. Lucky for you, Star Spangled Batter is still taking orders for next week's festivities! Call them now, though, as they require a lead-time of two days if possible.
So, who ARE the people behind one of the most successful Black Hill's bakeries? Let me introduce you to Brenden Berger and Erica Reiter (not pictured).
This duo took over the original business of Star Spangled Batter a year ago. They have grown the business beyond what they ever thought imaginable.
"Really, our only worry is how to keep up with the demand," says Berger, who grew up in Rapid City and attended Steven's High School before heading to Culinary School in Mitchell.
Expanding from just cupcakes to wedding cakes (the largest part of their business), to cookies and breakfast items - Berger and Reiter feel they are just getting started.
"We dream of expanding our space to include a cafe. We'd like to add savory items to our offerings and even have a lunch menu - which is where Erica's background and passion reside. "We know it will take time to get there, but we are patient - and we aren't afraid of working hard."
Speaking of hard work, Berger and Reiter work 14 hour days to keep up with their ever-increasing wedding cake + cupcake orders. "We had forty weddings on our calendar last June - twelve of them in just one weekend. That was the weekend we literally didn't sleep."
Berger took me behind the scenes - beyond the rows of pretty cupcakes and sweets - to the back kitchen where all the hours of effort and dreaming and working hard take place. And butter. This is where the butter lives, people.
As I watched the frosting mix, I wondered if I could rent this baby during my Christmas baking marathon with the kids? No, it turns out, I cannot. BUT, Berger did say they could provide the sugar cookies and frosting for me - and then the kids can decorate at home. Are you listening to this? GENIUS.
Berger says constant customer feedback on their frosting(s) is where a lot of their success is. "Delicious frosting that isn't too sweet is hard to create. But we believe we have perfected it, as do our clients - thank Goodness!"
Star Spangled offers over 42 flavors -- and they deliver! (For those who are not locals, the bakery is working on offering shipping, as well.)
Fresh cookies coming out of the oven. Dough in the bowl. The smell of vanilla is everywhere.
I have a thing for colored bottles. This is where the artist and the chef have fun. It's not just a cake - it's an art form. Especially when it tastes as good as theirs does!
Something about stacks of pans waiting to be washed that speak of a productive day that started at 4am.
Do you ever wonder what happens to the extras that haven't sold that day?
Star Spangled Batter believes in giving. They regularly donate to the Cornerstone, VFW, Habitat, Love, Inc., etc.
"Once in awhile, we just place the goodies outside on the picnic table with a 'Free' sign nearby. We hate to see items go to waste - and they don't. They are gone by morning."
With hearts as large as Brenden and Erica's - and a work ethic to match their vision - it looks like Rapid City has a wonderful place to go to when the craving strikes!
Star Spangled Batter is located off of Jackson Drive. They are tucked in a bit, so look for their bright red van parked by the street as your clue that you have arrived.
